About this role

The General Manager manages the business of a restaurant, responsible for meeting sales and profit goals, ensuring exceptional guest satisfaction, and following company policies. This role reports to the District Manager and supervises the management team and hourly crew members. It demands strong leadership to drive operational success.

Day-to-day involves analyzing operating statements to identify problems and take corrective action. Stay aware of local market trends, competition, and opportunities, implementing LSM programs with District Manager assistance. Ensure compliance with the El Pollo Loco Operations Manual and proper menu preparation in a clean, safe manner.

Oversee inventory levels for food and non-food items, communicate product deficiencies, and maintain a pleasant environment for exceptional guest service. Directly supervise assistant managers, hold them accountable, set development goals, and provide regular performance feedback. Prepare work schedules, conduct meetings, and foster open communication in a positive work environment.

Handle recruitment, interviewing, selection of hourly employees, and participate in management hiring. Ensure training, disciplinary action, recognition, and proper personnel administration including timekeeping and performance appraisals. Accountable for safety, regulatory compliance, accident handling, and representing the company at Worker’s Compensation hearings.

Requirements

  • Experience achieving restaurant sales and profit goals
  • Ability to analyze operating statements and implement corrective actions
  • Knowledge of local market trends and restaurant competition
  • Familiarity with restaurant operations manuals and preparation standards
  • Proficiency in managing food and non-food inventory
  • Supervisory experience with management teams and hourly crew
  • Understanding of health, sanitation, fire safety, and regulatory compliance
  • Skills in employee recruitment, scheduling, training, and performance management
